Broccoli Salad & Tahini Dressing

I know I probably sound like a complete weirdo here but Im just going to throw this out there.. sometimes I get the biggest cravings for broccoli! I could just sit and eat an entire bowl of steamed broccoli for dinner sometime, I love it! Anyway, I realise not everyone would appreciate a plain bowl of broccoli so this recipe makes it a lot more appealing!

So so easy to make and makes such a delish and healthy side dish. GF, vegan and all the rest of it. Its been perfect for me while I am detoxing this month. The creamy tahini dressing gives it a really rich nutty taste too. Recipe below – Enjoy! Kady x

Broccoli Salad & Tahini Dressing
Serves 2
Gluten Free, Dairy Free, Sugar Free

Ingredients
  1. 1 head broccoli, chopped
  2. 3/2 cup almonds, roughly chopped
  3. 1 tbsp spoon lemon juice
Tahini Dressing
  1. 1/3 cup tahini
  2. 1/2 small garlic clove
  3. 1 tbsp spoon lemon juice
  4. 1 tbsp hot water
  5. sea salt & black pepper
Instructions
  1. Steam the broccoli until just cooked.
  2. Roughly chop the almonds and mix through the broccoli.
  3. Make the dressing by crushing the garlic and mixing with lemon, tahini and some boiling water.
  4. Mix the dressing through the broccoli and serve
